Chinese Style Roast Chicken
This is how we cook our lovely crispy roast chicken, When you try this one I’m sure you will be happy with the results. The Glaze gets this chicken so nice and sticky and the skin stays so crisp and crusty.

- Lime and Salt your chicken in 1 cup water for 20 mins, Wash and drain chicken, squeezing to get all the water out
- (optional) take your kitchen scissors and cut the back out of your chicken and crack the breast bone so you can spread your chicken out as flat as possible (as shown in video)
- Season chicken with the dry and wet ingredients, (optional) allow to marinate overnight to fully soak up the flavor) Place chicken breast facing up on a roasting rack, add 1 cup of water or whatever liquid you choose, cover with foil and bake in the oven at 350° for an hour.
- After your chicken starts to get color and you can tell that it is getting to its cooked stage, pull it out of the oven uncover the roasting pan and apply your baste that you made previously. Return to the oven for 15-20 mins or until golden brown, Repeat this as much as once more time but if you do this too much your chicken will dry out.
- Allow chicken to cool for 20 mins then take to your chopping board or leave whole and cut as you wish.
