- Sift your flour, salt and baking powder. Mix well then add shortening and work into a mixture.
- Add water to make a soft dough, Kneed well for about 15 mins or until you have a firm sticky texture and leave to rest for around 20 mins.
- This mixture will make you around 6 dough balls. Once you have made your dough balls leave them for another 10 mins to rise.
- Take the dough balls and work them into a flat formation and then with your rolling pin flatten to around 1/8 inch thick then cut into triangles.
- Once done get your oil very hot and begin to fry the bakes constantly spinning them in the oil so they will swell evenly and not blow out. Fry till golden brown.
Saltfish Souse Instructions
- Rinse saltfish pieces and place in saucepan with 1 cup of water and boil, Drain and repeat twice to remove the salt that was used to cure this fish. If you don't it will be extremely salty and you will not be able to season properly.
- Break into pieces and add tomatoes, onions, cucumbers, and sweet peppers. Mix in with Olive oil and salt as needed. Mix well
- Serve with Hard boiled eggs, and avocado wedges if you like.
